Potassium Sorbate, E202, food preservative, CAS no.24634-61-5, Chemical Formula C6H7KO2 the potassium salt of sorbic acid. Manufacturing process via chemical synthesis, sorbic acid and potassium hydroxide as raw materials. Function: inhibit the growth of mold, yeast, and microbes, in turn increasing shelf life of food products. Uses: in cheese, wine, yogurt, dried meats, apple cider, soft drinks, fruit drinks, and baked goods. It can also be used in dried fruit products.
