E150c (Ammonia Caramel):

  1. Production:

    • Made by heating carbohydrates with ammonia compounds but without the use of sulphites.
    • Known as Class III Caramel.
  2. Properties:

    • Brown to dark brown color.
    • Typically used in environments that do not require high stability in acidic conditions.
  3. Applications:

    • Used in beer, sauces, bakery products, and some non-acidic beverages.
    • Adds a reddish-brown hue to food.
